Sesame Chicken

My family LOVES sesame chicken. Its sweet and its easy to eat. I love it because its yummy and I can use other parts of the chicken besides the breast. The dark meat of the chicken thighs gives this dish a full flavor.

Ingredients

4 servings

  • Meat from 4 chicken thighs, cut into bit size pieces (you can substitute breast meat if you prefer)

  • 1 large egg!

  • 4 T corn starch (divided 2T and 2T)

  • pinch salt and pepper

  • 2 T oil

  • ¼ C Tamari or soy sauce

  • 3 T water

  • 1 T toasted sesame oil

  • 3 T brown sugar

  • 2 T rice vinegar

  • 1-2 inches of fresh ginger,

  • 2 cloves garlic, minced

  • ¼ c sesame seeds (we usually buy our sesame seeds in bulk)

Directions

  1. In a large bowl, whisk together egg, 2 T cornstarch, and salt/pepper. Toss the chicken in the egg and cornstarch mixture.

  2. Heat a large skillet with 2 T oil over medium/high heat. When oil is very hot add the chicken and all of the egg mixture. Let cook for 1-2 minutes then turn. Cook until it is golden brown and cooked throughout (7-10 min).

  3. While chicken is cooking, prepare the sauce. In a small bowl, stir together soy sauce, water, sesame oil, brown sugar, rice vinegar, ginger, garlic sesame seeds, and remaining cornstarch.

  4. Once chicken is cooked pour the sauce over the chicken. Toss the chicken to coat. The sauce will begin to thicken as soon as it hits the skillet. Once the chicken is coated turn off the heat.

  5. Serve with rice. Or noodles. Or by itself. Its your dinner, you do you.
