Sheet pan dinners are the easiest. They are perfect for a nutritious weeknight meal. You can experiment with all kinds of vegetables, but this one is a winner in our house.
6 chicken leg quarters
1lb small potatoes
1lb green beans, washed and trimmed
1 head broccoli, washed and cut in florets
2 T olive oil
Salt/pepper/Italian seasoning to taste
Preheat oven to 450
Oil a large sheet pan (about 1 t. )
Put the remaining oil in a bowl. Add the potatoes and stir until coated then place them on the sheet pan.
Add the green beans and stir until coated then place them on the sheet pan.
Add the broccoli and stir until coated then place on the sheet pan.
Place the chicken quarters on the sheet pan and brush the remaining olive oil on the chicken.
Spring everything with salt, pepper, and Italian seasoning.
Cook uncovered at 450 for 30 min or until the chicken thigh reaches 165 degrees.
If you want to make this ahead of time, you can assemble the pan, cover, and place in the fridge. Pull it out when you are ready to roast it.
