November 30, 2017

Our kids LOVE broccoli. Seriously, they can't get enough. This dinner is a big hit at our house...AND its super easy. Winning!

2 T cornstarch

2 T water

1 clove garlic, minced (or 1/2 t garlic powder)

1 lb flank or sirloin steak (cut in strips thinly across the grain)

2 T olive oil

2 head broccoli (remove florets from the stalk)

1 small onion (cut in strips)

1/3 C soy sauce

2 T brown sugar

1 inch minced garlic (or 1 t ground ginger or 2 drops doTerra ginger oil)

1 T cornstarch

Heat 1 T oil in a heavy skillet over medium-high heat

Mix cornstarch, water, and garlic in a small bowl. Add steak and coat steak

Add steak to pan and cook until done (3-4 minutes)

Remove steak and set aside

Add remaining oil, broccoli and onion. Stir fry for 3-5 minutes or until vegetables are the desired tenderness

Add beef back to the pan

Mix soy sauce, brown sugar, ginger, and 1 T corn starch. Mix until smooth. Add the soy sauce mixture to the pan and cook 2 more minutes or until thickened

Serve over a bed of rice and enjoy.
