Asian Pork Roast


Is there anything better than having a delicious meal ready when you get home from work? Its one of the things we do in our busy house to keep it together. Slow cookers=happiness. And look at the beautiful crust on that thing!

Ingredients

  • [endif]-- 2-3 lb pork loin roast![endif]--

  • [endif]--[endif]--![endif]--![endif]--[endif]--[endif]--[endif]-- ¼ t pepper![endif]--![endif]--![endif]--

  • [endif]--[endif]--[endif]--![endif]--![endif]--![endif]--[endif]--[endif]--[endif]--[endif]-- 1 onion, chopped![endif]--![endif]--![endif]--![endif]--

  • [endif]--[endif]--[endif]--[endif]--![endif]--![endif]--![endif]--![endif]--[endif]--[endif]--[endif]--[endif]--[endif]-- 2 T soy sauce![endif]--![endif]--![endif]--![endif]--![endif]--

  • [endif]--[endif]--[endif]--[endif]--[endif]--![endif]--![endif]--![endif]--![endif]--![endif]--[endif]--[endif]--[endif]--[endif]--[endif]--[endif]--½ c apricot preserves![endif]--![endif]--![endif]--![endif]--![endif]--![endif]--

  • [endif]-- 2 T Dijon mustard![endif]--

  • [endif]--![endif]--[endif]--[endif]--1 T fresh, minced ginger![endif]--![endif]--

  • [endif]--[endif]--![endif]--![endif]--[endif]--[endif]--[endif]-- 3 garlic clove, minced![endif]--![endif]--![endif]--[endif]--[endif]--[endif]--![endif]--![endif]--![endif]--[endif]--[endif]--[endif]--[endif]--

Directions

  1. Sprinkle pork with salt and pepper

  2. Grease a large skillet and place over med high heat. Add pork roast and cook, turning occasionally about 6 minutes.

  3. Place browned roast in a 5-6 qt slow cooker.

  4. Add onions to the skillet and cook about 3 minutes until lightly browned.

  5. Add preserves, soy sauce, mustard, gier and garlic to the pan. Bring to a simmer.

  6. Cover and cook on low 8-10 hours (or high 4-5 hours).

  7. Transfer pork to a cutting board and cover with foil

  8. Cut the pork in half lengthwise then in slices.

  9. ENJOY!
