Creamy and spicy and enough said. Its always a win when the whole house falls in love with a dish. And that is exactly what happened with this one. You can adjust the spice level. We make it a little tame then add copious amounts of cayenne to our individual dishes. So yummy.
2 T grated parmesan cheese
2 tbsp olive oil
12oz jarred marinara sauce (avoid thick sauce)
2 cloves garlic, minced
1/4 cup chicken stock
1/4 tsp + crushed red pepper flakes (adjust depending on how spicy you like it)
1/2 cup heavy cream
Sliced mushrooms (about 4 ounces)
3 small tomatoes, diced
2 cups baby spinach
16oz penne pasta
grated parmesan cheese for garnish
Prepare penne pasta per package instructions..
Add 2 tbsp of oil to a skillet and cook garlic until fragrant over medium heat
Add in diced tomatoes and chicken stock. Cook for 1 minute
Add marinara sauce and crushed red pepper. Simmer 10 minutes.
Stir in cream.
Add mushrooms and spinach. Cook until heated through.
