I LOVE this dish. Its so rich and comforting. It was also one of the first things Uncle G made when we started dating. Its also easy to dress up with extra vegetables and meats. Sometimes we will throw in a few shrimp sautéed in butter and garlic. There really aren't words to adequately describe how good it is.
½ C sweet cream butter (1 stick)
2 garlic cloves, minced
2 C heavy Whipping Cream
¼ t white pepper
½ C grated parmesan cheese
¾ cup mozzarella cheese
1 box fettuccine
Fresh parsley, chopped
Cook fettuccine according to package directions.
Melt butter in a medium saucepan over medium low/low heat.
Add the garlic, cream, and white pepper. Simmer while stirring often (about 2 minutes).
Add parmesan cheese and simmer 8-10 minutes until thick and smooth.
When sauce is thick and smooth, add mozzarella and stir frequently until smooth again.
Add parsley and our over fettuccini. Serve immediately.
