Beef and Cheese Enchiladas
Enchiladas are super simple and they freeze beautifully. Here is a basic beef and cheese recipe that is a family favorite in our house.

1 pkg corn tortillas
3 sprigs cilantro, chopped
Directions
Preheat oven to 375.
Brown beef in a medium skillet. Drain the beef and then add the enchilada seasoning. Stir until well coated.
Warm tortillas in the microwave (on a plate covered with a wet paper towel for 30 -60 seconds). This makes the tortillas easier to work with.
In a large bowl mix beef, jalapeno, corn, and cheese (save a little cheese for the top of the enchiladas).
Fill tortillas with equal amounts of beef mixture and roll up the tortilla. Place the tortilla seam side down on a greased baking sheet.
Pour the enchilada sauce over the tortillas and sprinkle the remaining cheese.
Bake 12-15 minutes.
Serve with Mexican rice and sour cream!
