Beef and Cheese Enchiladas

September 4, 2017

Enchiladas are super simple and they freeze beautifully. Here is a basic beef and cheese recipe that is a family favorite in our house.

4 servings

  •  1 lb ground beef
  •  ½ c corn kernels
  •  1 T enchilada seasoning
  • 1 can enchilada sauce
  •  1 jalapeño, seeded and finely diced
  •  4 oz Mexican cheese (Chihuahua)
  • 1 pkg corn tortillas

  • 3 sprigs cilantro, chopped

  1. Preheat oven to 375.

  2. Brown beef in a medium skillet. Drain the beef and then add the enchilada seasoning. Stir until well coated.

  3. Warm tortillas in the microwave (on a plate covered with a wet paper towel for 30 -60 seconds). This makes the tortillas easier to work with.

  4. In a large bowl mix beef, jalapeno, corn, and cheese (save a little cheese for the top of the enchiladas).

  5. Fill tortillas with equal amounts of beef mixture and roll up the tortilla. Place the tortilla seam side down on a greased baking sheet.

  6. Pour the enchilada sauce over the tortillas  and sprinkle the remaining cheese.

  7. Bake 12-15 minutes.

  8. Serve with Mexican rice and sour cream!
