This is a super easy recipe that we got when we were first dating. We had 3 littles (his mine and ours) aged 4-9 and they ate A LOT! It's been 14 years and its still in the rotation! One of the beautiful things about this recipe is that it can go from being all canned and packaged to being made "from scratch."
1-2lbs ground beef or a combo of ground beef and ground pork (browned)
1 small onion, diced
1 envelope (or about 2 T of homemade) taco seasoning
2 cans of beans (chili, pinto, kidney) or use 32 ounces of soaked/cooked beans. Don't drain.
1 can (or 2 cups frozen or fresh) corn, undrained
1 can stewed tomatoes or diced tomatoes, undrained. The type you use depends on your tastes
1 can Rotel, undrained
1 envelope (or about 2 T of homemade) ranch dressing mix
1-3 cups of water, depending on how thick you want your soup.
Brown the meat and onion in a dutch oven (or in a skillet and transfer it to a soup pot after it's cooked).
Drain the fat.
Add all other ingredients
Bring to boil then reduce heat for 15 minutes
Serve with chips, cheese, cream cheese, avocado, or any other goodness.
