We LOVE soup. Any time of year. Its quick, easy, and nutrient dense. This is a super flavorful soup that is quick and easy. Its great in the winter, but the fresh summer veggies make it a great summer soup.
1 lb sausage (we usually use bulk Italian sausage and brown it, but you could use sausage in casings and cut it into slices)
1 onion diced
1/2 lb carrots, peeled and sliced
1/2 bunch celery, sliced
1 clove minced garlic
1 bunch spinach or kale (we prefer spinach but kale is great too)
1 can white beans, drained (cannellini beans are our favorite)
1 large bouillon cube (vegetable or chicken)
6 cups liquid (water or stock)
1 t. Italian seasoning
1/4 t salt (more to taste)
If you like spice, throw in some cayenne or crushed red pepper
Brown the sausage in a large pot or dutch oven. Add the onion, carrots, celery, and garlic to the sausage and cook until the onions are soft. The carrots will soften throughout the cooking process. Add the spinach or kale and cook a few minutes until its wilted.
Add the remaining ingredients. Stir and cook 10-15 minutes. Enjoy!
