How Do You Want Your Eggs?

What is the best part about eggs? I don't think I can pick one thing. They are delicious, they can prepared a variety of ways, they're easy to make, and they are full of protein and healthy goodness. In our house it is important that we know where our eggs come from, so we get our eggs from the coop or the farmer's market. Yum yum. If you follow our stories on Instagram at all, you know that Uncle G requests spicy egg sandwiches at least once a week. Egg sandwiches take over our house:)

 

 

Scrambled: mix up eggs, a little milk and a little salt and pepper. Add oil or butter to the skillet over med/high heat. Add the eggs. Push the around with a spatula until they are cooked all the way.

To dress them up you can add cheese, onion, bacon, ham, spinach, bell peppers, sausage, mushrooms, the possibilities are endless.

 

Fried eggs: Put some oil or butter in a skillet and heat it to med/high. Crack an egg in the skillet and sprinkle some salt/pepper on it. Cook it until the yoke is done the way you like it.

 

 

Fried Egg Sandwich

Toast some bread, butter it, throw a slice of cheese on it and add your fried egg from above^. Its ready.  

 

 

Hard boiled eggs: Basically this is just boiling an egg in its shell then peeling it. Everyone has their own technique. Here’s ours…

Put egg(s) in a pan and fill with water. Bring to boiling. Boil for 15ish minutes. Immediately remove the eggs and put them in ice water to cool. Peel your egg(s) and enjoy.

If you want to make a few at a time to save for later, just peel them and put them in a container with a lid and cover the eggs with water. Store them in the fridge for a few days.

 

Uncle G's Spicy Egg Sandwich

Toast some bread and whip up some Chipotle Mayo (mix some mayo with chipotle seasoning). 

But some butter/oil in a skillet and grease 4 egg molds. Crack an egg into each mold and sprinkle with salt, pepper, and cayenne. 

Slide a spatula around the edge of the mold to release the egg then flip it. When you flip it add a piece of pepper jack cheese to two of the eggs. 

When the eggs are done to your liking, smother the tops of the eggs with tabasco then put one plain egg and one cheesy egg between two pieces of chipotle mayo toast.
